Bajo El Sol Gallery will host a book signing at 5 p.m., Thursday, Feb. 28, for “My Modern Caribbean Kitchen” by Julius Jackson, a Virgin Islands chef. Attendees will get to sample one of his delicious recipes. Bajo El Sol’s new, expanded location is on the ground floor of Mongoose Junction across from Little Switzerland, next to Made in St. John.

In this exciting collection, Chef Julius Jackson takes the dishes he grew up with and applies his own culinary flare, crafting home-cooked meals bursting with the distinct spices and tasty ingredients for which the Caribbean is known.

Fantastic, tropical favor is easy to achieve. Start the day off with Island-Style Farina for a classic Caribbean morning. No-Mess Curry Chicken is an easy meal that packs a tasty punch; One-Pot Wonder Chicken and Rice is a crowd-pleaser. Tangy Creole Fish is crisp and fresh, while Pan-fried Plantains can be enjoyed anytime throughout the day. Julius Jackson is a professional chef, professional boxer, author and 2008 Olympian representing the U.S Virgin Islands. Julius is currently the head chef and manager at My Brother’s Workshop Bakery & Cafe, a non-profit training program for at-risk youth. He resides on St. Thomas with his wife Nicole and their two children.
